Grilled Mango squash/Aam Pora…..๐Ÿน๐Ÿน

Ingredients:

1.Raws mango-1 piece

2.Black salt-as per your taste

3.White salt-as per your taste

4.Roasted cumin powder-1 tsp

5.Ice cube-as many as you want

6.sugar/jaggery-as much as you want

Method:

Step 1–Roast the mango on gas stove.Not too much,when little bit of smokie flavor come you should be done.Roast should be like this.

Step 2–Then let it cool completely.Then pill off the skin and put all the mango in the juicer.Add sugar, black salt,white salt,roasted cumin powder,ice cube,water..Make a fine paste…Now you can store that paste in a glass air tight container in refrigerator for 2 weeks..

Step 3–when you will make squash take 5,6 spoons or as you want in a glass and add water as you want enjoy the summer..โ˜บ

1.Kabli chana/chick pea-2 cups

2.Tea bag-2 bags(not flavor or gree tea)

3.Black cardamom-2 piece

4. Turmeric-1 tsp

5.Ginger-2 tbl spoons (cut in to small pieces)

6.Garlic-1 tbl spoon

7.Salt-as per your taste

8.Green chilli-as per your taste

9.Ajwan-1 tsp

10. Coriander powder-1tsp

Method:

Step 1– Soak the kabli chana /chick pea in water for at least 8 hrs..When its become double in size put it in pressure cooker with water,black cardamom,tea bags,salt,white oil,turmeric..Wait for 4 whistle or full cooked..it should be too soft..then drain the water and keep the kabli chana/chick pea a side…

Step 2–Put a pan on the gas.Put ghee,ajwan,ginger,garlic,green chili,fry for 3 mnts then add Kali chana or chick pea then add all the masala left..Then fry for 10-12 mnts in medium flame…Off the gas and cover it for 10mnts…Serve with fulka,paratha,poori…

1.Unsalted butter-4 count,16 oz

2.Heavy base pan-1 medium size

Step 1–Put the pan on the gas and keep the flam extreme low..then give all the unsalted butter..wait till all fat goes down and become brown,and light clear liquid should be come up…good aroma will also come out..It will take almost 45mnts..When this kind of brownish color come your ghee will be ready….

Ingredients::(for 20 Rotis/paratha)

1.Beetroot-3 pieces small

2.Wheat flour/all purpose flour-4 cups

3.white oil-2 tbl spoons

4.Salt-2 tbl spoons

5.Turmeric-1 tbl.spoon

6.Chat masala-1 and half tbl spoon

7.Green chili-as per your taste

8.Ginger powder/fresh ginger-1tbl spoon

9.Garam masala-1 tbl spoon

10.Roasted cumin powder-2 tbl.spoon

11.Ajwan-1tbl spoon

Method:

Step 1–All the beetroot put in a pressure cooker and give 4 whistles..Then put the boiled beetroot in a mixer grinder and all the spices included salt add in it..Except oil and ajwan.Make smooth past..Try to grind with the water which you used to boil beetroot.If needed you can add more.Paste should be watery becoz we will only use that paste to make dough.

Step 2–Now in a bowl take Wheat flour /all purpose flour.Add oil and ajwan..Then slowly slowly add the beetroot paste and make a tight dough..With that dough you can make roti or paratha and enjoy with curd and pickle…

1.Flour-2cups

2.Curd-1/2 cup

3.Baking soda-2 tbl spoons

4.Salt-2 tbl.spoons

1.Cheeses-2 cups

2.Tomato sauce/pizza sauce- 4 tbl spoon

3.red,yellow,green bell papper-as much as you want

4.Sweet corn-2 tbl spoons

5.Italian seasoning

6.Chili flakes

7.salt,black paper

8.If you need add chicken,paneer whatever you want..

Method::

Step 1–In a bowl add all the pizza dough ingredients and make a smooth dough..It should not be dry dough..After make a dough rest it for 30mnts..

Step 2 — Now take a nonstick and put on a gasstove.Make the pan high heat..In the mean time roll the pizza dough same size as pan..Then put oil on the high heat pan and give the roll dough on it..When down side become brown brown like this…

Step 3–Then flip otherside and keep the flame low and now spread the sauce then cheese and all toppings..Put some more cheese on the top as well..Now cover it and cook till the cheese fully melted…Then your pizza is done cut it and enjoy hot pizza…

Mango Ice cream(ingredients)::

1.Whipped cream-1/2 gallon

2.Brown sugar-5 tbl spoons

3.Mango pulp-1 can

4.Vanilla essence-1 tbl.spoon

5.Whisker

Method:

Step 1–Pour the whipped cream in a large bowl because after whisking cream will be double in quantity..Cream should be chilled..Start whisking in medium speed.After 5 mnts add sugar and vanilla essence..Whisk it again till its become light and fluffy.

Step 2–Then leave the whisker and pour mango pulp in it..Then mix it with spatula softly..Dont use whisker after adding flavors.Then store in a Glass container with airtight lid..Put in the freezer for at least 8 -10 hrs…Your mango Ice cream is ready now..

Chocolate decoration(ingredients)

1.Any flavored chocolate bar in packet only-1 packet

2. Parchment baking papper

3.Hot water-1 big bowl

Step 1–Put that chocolate packet in a hot water bowl.Wait till chocolate melt inside the packet.Cut corner of the packet very small hole..Now take parchment paper and on it design whatever u want..Wait 2hrs then put it in the fridge not freezer…After it will set properly store in a box and refrigerate it for a long time..

Ingredients:

1.Milk-1 gallon

2.Lemon-4 piece

3.Yellow food color-1/2 tbl spoon

4.Green cardamom-3 piece

5.Orange-1 piece

6.Sugar-2 cups

7.Water-4 cups(same cup size as sugar cup)

8.Semolina -1 tbl spoon

9.Cotton clean handkerchief-1 piece

10.Flour-2tbl spoons

Method:

Step 1–Boil the milk in a big pot,when its come to a boil squeeze the lemon and start stirring..Milk will be cottage cheese or panner in few seconds. Immediately drain that on the handkerchief.Paneer will stay on the handkerchief.Make a tight knot and leave for at least 2 hrs for all the water drain out from the paneer.

Step 2–In a big pot pour the sugar,water,green cardamom,orange juice.Wait till boil..

Step 3–when that sugar syrup is going on in that time take that paneer.Add semolina,orange zest,yellow food color,flour..Then smash it in a soft hand.Dont smash it in a hard way other wise oil will come out.Smash it till its become so smooth that when you will make small ball there will be no crack on that ball..Now make ping pong ball size dough..when that syrup comes to boil give all the ball in it.

Step 4–Cover it for 15 mnts in a high flame.Then make the flame medium and boil with cover around 20-30 mints.In the mean time every 10 mnts open the cover and pour room temperature water half cup half cup.After 30 mnts you will see your rosogolla double in size. open the cover and let it cool..Now your komola Bhog is ready to eat….

Ingredients:

  • 1.Moong dal-2 medium cups
  • 2.Radish-2
  • 3.Tomato-1 small
  • 4.Ginger grated/Ginger powder-1 tbl spoon
  • 5.Salt-as per your taste
  • 6. Turmeric- 2 tbl spoons
  • 7.Green chili-as per your taste
  • 8.Mustered oil-2 tbl spoons
  • 9.water-5 cups
  • 10.Cumin seeds-1tbl spoon
  • 11.Ghee(clarified butter)-1tbl spoon

Method:

Step 1–Fry the moong dal in a pan without oil till the moong dal become brown but not black..Then put that in a pressure cooker with salt and turmeric with water for 4 whistle.

Step 2–Cut the radish in thick circle and boil in for 6 mnts…Drain the water and keep the radish in a side..

Step 3–Put a pan on gas.Pour the oil,cumin seeds,green chili,ginger and fry for 3 secs..Then add the semi boiled radish add turmeric little bit of salt fry it till slightly brown.Then add tomato and cover it till tomato smashed..Finally add moong dal and boil it for 5 mnts.. Consistency should not too much watery…then add ghee.Now u serve it with white rice or Roti,paratha…
