This is a traditional bengali veg dish.Which I learnt from my mother in law….

Bottle gourd curry/Lauer Ghonto(Ingredients):

1.Bottle gourd/Lau-1 piece

2.Mastered oil-2 tbl spoons

3.Salt-As per your taste

4.Cumin seeds-1tbl spoon

5.Roasted cumin seeds-1 tbl spoon

6.Green chili-As per your taste

7.Ghee(clarified butter)-1 tbl spoon

8.Fresh coriander-10-12 leafs.

Method:

Step1–Cut the bottle gourd or Lau in small cube.Put a pan on the gas,pour the oil.Then give cumin seeds and green chili..After 10 secs give bottle gourd or lau and salt.Cover it till the vegetable become totally soft..But not smashed.In this time put the gas in medium to low flame.

Step 2–After the vegetable totally done give roasted cumin seeds,ghee and coriander leaf..Cover it for 5 mints.Your easy healthy veg dish is ready.

Healthy and Munching Oil free flattend rice(chire bhaja)…..

Flattend Rice fry (Ingredients):

1.Flattend rice/Chire-500grm

2.Curry leaf-8 pieces

3.Salt(black and white)-as per your taste

4.Red dry chili-optional

5.Ginger-1tbl spoon

Method:

Step 1–Put a heavy bottom pan on a gas..Flame should me medium low for the whole process.In a dry pan give curry leaf and ginger,red dry chili fry till golden brown.

Step 2–Then give flattend rice or chire.Fry till golden brown.Then add black and white salt ..stir continuously other wise it will burn..When it is little bit brow and crispy your dish is ready..

Step 3–Spread it on a plat and wait it cool down.Then store in a air tight container..

Dal poori/luchi and Cauliflower Curry😋

Dal Poori/Luchi(Ingredients)

1.Flour-500grm

2.Oil-2tbl spoons

3.Salt-As per your taste

4.Sugar-1small spoon

5.Split urad dal without skin-2 small cups

6.Roasted cumin seeds-1tbl spoon

7.Ajwan-1/2 spoon

8.Green chili-As per your taste

9.Water-if needed

Method:

Step 1–Soak the split urad dal in a cold water for at least 8 hrs.After that drain the water and grind it with the green chili..Paste shoul be not too much watery so when you are grinding it add only 2 tbl spoons of water.Then pour it in a large bowl,add salt and roasted cumin seed.

Step 2–Add flour in the paste and add salt,sugar,oil.Then mix it well with that urad dal mix and make a tight dough..If need only then add water to make a dough.Now your dal poori dough is ready.Keep a side the dough for atleast 20 mints.

Step 3–Now in a big pan heat the white oil for deep fry.From the dough make ping pong ball size small small ball and make a 4” diameter circle with the rolling pin.Roll all the poori fisrt and then fry both side one by one in that deep oil.When they look like same as in the picture your poori/luchi is ready.

Cauliflower Curry(Ingredients):

1.Cauliflower-1 piece

2.Onion-1 small

3.Tomato-1big

4.White oil-4tble spoons

5.Salt-As per your taste

6.Turmeric-1tbl spoon

7. Coriander powder-1tbl spoon

8.Cumin powder-1 tbl spoon

9.Garam masala-1 tbl spoon

10.Green chili-As per your taste

11.Ginger powder-1 tbl spoon

12.Green cardamom-2 pieces

13.cloves-3 pieces

14. Cumin seeds-1tbl spoon

15.Warm water-1 small cup

Method :

Step 1–Cut the cauliflower in small pieces,= then wash it.Then steam it for 7 mnts.Not boil it just steam it.

Step 2–Cut the onion and tomato into small pieces.Put a pan on the heat pour the oil.Give cumin seeds,green cardamom,cloves.Fry for 10 seconds.Then add onion fry it till brown,then add tomato and salt,ginger,turmeric,garam masala,cumin powder,coriander powder,green chilis.Fry it it that masala’s rawness gone and oil separate.

Step 3–Give that steam couliflower and mix it in a medium flame for 6 mints.Then pour water and cover for 7-10 mnts in a low flame.Then open the cover and boil it for 4mnts.Now your cauliflower curry is ready..

Beetroot Rice, Boondi Raita, Chole and Cucumber Salad

Lets learn how to prepare this awesome dish. This will be very easy and yet very healthy for you. 🙂

Beetroot rice( Ingredients )
1.Beetroot-2 small
2.Basmati Rice-200grm
3.Onion-1 small
4.Ginger-1/2 inch
5.White oil-2 tbl spoons
6.Salt-as per your taste
7.Green chili-as your taste
8.Turmeric-1 tabl spoon
9.Cumin seed-1tabl spoon
10.Ready made biriyani masala(from any Indian grocery store)-2tbl spoons

Method:
Step 1–Boil the basmati rice and drain the water.Spread the dry rice in a plate.

Step 2–Grate the beetroot.(dont wash the beetroot after grating.pilled the skin and wash it)

Step 3– Fine sliced the onion.and grate the ginger..slit the chili.

Step 4–Put a pan on the heat..Pour the oil and cumin seeds,green chili,ginger,onion..Fry all the thing till the onion become light brown.

Step 5–Give beetroot and salt,termaric,biriyani masala..Cover it and put the flame in low..Wait it beetroot cooked and its raw smell gone.Dont over cook the beetroot..

Step 6–Mix the basmati rice in it and mix it very slowly and in this time gas flame should me low..After 3 mnts cover it and leave it for 6 mnts…Then your beetroot rice will be ready…

Boondi Raita(Ingredients)
1.Curd-1 small cup
2.Salted Boondi(available in Indian grocery store)-2tbl spoons
3.Black salt-As per your taste
4.onion -2tbl spoons
5.Roasted cumin seeds-1tbl spoon

Method:
Step 1–Beat the curd with black salt.
Step 2–mix onion and boondi.Then mix roasted cumin seeds.your raita is ready.

Chole(Ingredients)
1.Kabli chana-1small cup
2.Onion-1 small
3.Tomato-1big
4.Ginger & Garlic paste-1 tbl spoon
5.Salt-as per your tase
6.Termaric-2tbl spoon
7.Cumin powder-1tbl spoon
 8.Coriander powder-1 tbl spoon
9.Garam masala powder-1tbl spoon
10.Cumin seeds-1tbl spoon
11.Green chili-asper your taste
12.White oil-3table spoons
Method:
Step 1–Soak the kabli chana 8hrs in the cold water..After 8 hrs give 5 whistles in the cooker with salt and 1tbl spoon termeric.
Step 2–Put a pan on the gas..Pour oil,cumin seeds,green chili.After that give onion fry the onion till golden brown.
Step 3–Give tomato,ginge & garlic paste,cumin powder,salt,termeric,coriander powder,garam masal and cook it till oil separate from that masala.
Step 4–Give boiled kabli chana in that masala and cover it for 7-10 mtns…adjust the water as per your choice..If you want watery then boil the chana with more water….Your Chole is ready now..
