Chicken with black cumin seeds/kalo jire chicken

Ingredients

1.chicken-1kg

2.Black seeds/kalo jire-3tsps

3. Mastrud seeds-1tsps

4.Onion-1 big

5.Turmeric powder- 1tsps

6. Coriander powder-1sps

7.salt-as per your taste

8.Green chilis-as per your taste

9.Ginger garlic paste-2 taps

10.White oil-3 taps

11.lemon juice-3 taps

Method

Step 1–Marinate the chicken with salt,lemon juice,turmeric powder,coriander powder,ginger garlic past for 30mnts minimum or whole night in the fridge.

Step 2–Grind the black cumin seeds/kalo jire,mastrud seeds,green chilis and make a fine paste.

Step 3–take a pan pour the oil,fry the onion till golden brown and then add the chicken.Keep the flame high and fry the chicken very well then put the flame in medium and cover it for 15 mnts or till the chicken become 90%cook.then add that paste in to it…Dont cook it for a long time otherwise it will be bitter in taste..Just again cover it and cook for 7 mnts…then ur dish will be ready…

8 minutes….done your vegetable mix….

2. Cabbage-1/2 cup

3.Potato-1 cup

4.Tomato -1 big

5.Green peas-2 tblsp

6. Turmeric-2 tsp

Method:

Step 1-In a big bowl mix all the ingredients and pour in a microwave pot.Then lid the pot and microwave for 8 minutes…Your vegetable is ready now..

Method:

Step 1-Marinate the fish with turmeric and salt for 20mnts.Put a pan on the gas pour the oil and fry the fish..Then take out the fish in a plate.

Step 2-In the same pan add green cardamom,cloves,bay leaf.After few seconds add the onion paste,green chili paste,ginger garlic paste,turmeric,salt,garam masala,fry till the all the masala cooked properly..when you see the paste not sticking in the pan you understand masala is done now.Then add warm milk.Wait

Step 3-Then add the fish and cover it for 5 mnts in a medium flame.After 5 mnts open the cove and Let it boil for 2 -3 mnts..When your curry become little bit thick and reduce sprinkle the coriander leaf…Now your milk fish is ready….

Ingredient

1.Makhani-500 grm

This is makhani

2.Milk-1/2 gallon

3.Sugar/jaggery-2tbls

4.Ghee-3 tsp

Method:

Step 1-In a pan pour the ghee and in that lightly fry the makhani till its become crunchy..

Step 2-After that in a medium pan pour the milk and wait till boil.When its starts boiling give the makhani and keep the flame medium and wait until milk reduce at least 60%.Then give the sugar stir it and your makhani kheer is ready now..Try to serve it cool.

Bengali traditional dish ….Ridge gourd paste/Jhinge Bata…

Ingredient

1.Ridge gourd/jhinge-4 piece

2. Turmeric-2 tsp

3.White salt-2tsp

4.Green chili-as per ur taste

5.Fennel flower-1tsp

6. Mustard oil- 3 tsp

7.Garlic-4 cloves

Method:

Step 1-Cut the ridge gourd in to small pieces and put in the blender,add green chili,turmeric,salt and make a smooth paste..

Step 2-In the pan give oil and fennel flower,garlic.After 10 seconds and the paste and keep stirring till all the water evaporate and the rawness gone.Then your curry will be ready..

Ingredient:

1.lemon-2 big yellow lemon(cut into small pieces)

2.Green chili-5 pieces

3.white oil-3 tbl spoons

4.Black mustard seeds-2 tbls

5. Fenugreek seeds-2tsp

6.White salt-2tbls

7. Asafoetida-1tsp

Method:

Step 1-Put a heavy pan on the gas.Give the oil,1tbls mustard seeds,asafoetida.Then give all the lemon.After 5mnts add the salt and green chilis.Tthen keep the flame in medium to low and cover it until lemon become soft.

Step 2-Inthe mean time dry roast fenugreek seeds and 1tbls mustard seeds..grind it and when the lemon become soft add this masala..the stir it for 7 to 8 mnts…then put it in a glass jar..like this…

Step 3-keep this jar in the sun for at least 3 days…close the lid and u can put in the sun…..after 3 days you can have it…..

Papaya Jam…..

Ingredient:

1.Ripe Papaya-1 big

2.Sugar/Jaggery-500grm

3.Lemon-half lemon

Method:

Step 1–Cut the papaya in cube and make a smoothe paste..Then put a pan on the medium flame..Pour the papaya smoothie in it…After 2 mnts add the sugar/jaggery..Keep the flame in low medium….in this picture you can see the first color when you just add the sweet.

Step 2– when the smoothie reduce and change the color like this

Add the lemon and let it cool completely in the room temparatur…Store in a glass bottle and keep it in the refrigerator for 1 month….

Healthy but different style herbs paneer…..

Ingredient:

1.Whole fat milk-1 gallon

2.Lemon-2 big size

3.Cumin seeds-2 tsp

4.Chili flakes-2 tsp

5.Dry basil/parsley-2tsp

6.Fresh cilantro-1 tsp

Method:

Step 1–Pour the milk in a big pot..wait till boil..In the mean squeeze the lemon in a boil…when the milk will boil give all the malasa and herbs…Then give lemon juice and continue stiring..In this time keep the flame medium low..

Step 2–when the milk become paneer strain it on the cheese clothes or cotton clean handkerchief..Dont wash it with clod water..Otherwise all herbs smell and taste will gone…Then after little bit cool down the paneer squeeze the clothe as much as u can..Then make knot and press it with any heavy thing and keep it overnight….Next morning your paneer will be ready..
